Dutch Rookwurst, Pork or Beef is commonly used. Cure is included. No binders for the old style rich flaovur. Suggest a minimum of 25% fat, Grind, mix, stuff, rest for a day, hang and smoke to desired flavour. Cook to temprature or freeze for later use.
