Summer Sausage - A sausage that is perfect for slicing and putting on your Subs, sandwiches and crackers of course! 

Makes a great snack stick style sausage when made into a pepperoni size stick.

Slice it up and enjoy on its own.

Try it with our Hi-Temp Diced Cheddar Cheese!

Add contents of the bag with 23 lbs of meat and 2 lbs of water/ice. Cut or grind meat to desired coarseness and mix all ingredients thoroughly. Hang to smoke and cook to temperature. Doesn't hurt to let it hang and bloom for a day or so after cooking
