Instructions:

Thoroughly grind your meat (pork, beef, or a blend). Use 1 kg of this seasoning mix for 23 lbs (10.5 kg) of ground meat and 2 lbs (1 Liter) of ice-cold water. Mix thoroughly until the meat becomes tacky and well-incorporated, then stuff into casings.

Recommended Casing: Hog 29/32 or 32/35 is the standard for a traditional-sized Bavarian smokie.
