Instructions & Batch Size:

  • The Mix: One 850g bag seasons 23 lbs of meat and 2 lbs of water or ice.
  • Preparation: Grind meat to your desired coarseness. Mix meat, water/ice, seasoning, and the included cure until the meat becomes tacky.
  • Processing: Stuff into large diameter casings for slicing rolls, or smaller casings for snack sticks.
  • The Bloom: After smoking and cooking to internal temperature, hang the sausage for 24 hours at room temperature to "bloom"—this results in a much deeper color and richer flavor.

*Note: Cure #1 is included in a separate packet inside the bag. For an extra authentic look, some customers love adding an extra teaspoon of whole mustard seeds!
